Chef Carly Mersereau prepares a multi-course French dinner. Vegetarian option available.
To begin // A caramelized onion tart with handmade puff pastry, accompanied by a tossed green salad.
Main course // Pepper-crusted local tuna, seared then braised in white wine. Served with mashed root vegetables, sautéed hearty greens, and fresh baguette.
Dessert // A trio of homemade ice creams: olive oil, citrus kefir, and sweet herb.
To drink // A selection of beer and wine at additional cost.
Carly Mersereau followed her love of bread and butter to Paris where she trained and apprenticed as a pastry chef. She cut her teeth in the bakeries of Toronto but has happily traded in the skyscrapers for the towering trees of Cortes.
