Cortes Skills Centre presents an Animal Processing Workshop with with Meatpunk Max Thaysen and trained butcher Tony Clark - the whole process start to finish. Saturday, Sept. 10, 10 - 5ish. In addition to hands-on and demonstration of the process, there will be discussion of safe food handling, edibility of various animals and their parts, cooking tips and techniques, meat preservation and non-food animal products such as hide tanning.
